Bento Fish Cakes
A few months back I made a bento with yellow corn and tamagoyaki. I think there was minced pork adobo or something, I forgot already. So anyway I just whatever is available and that is…leftover fish.
My initial plan was to pull the fish then stir fry it with string beans and ginger but I realized I still have a cup of left-over panko (there goes the left over again) so I insisted on making fish cakes.
I think what I did was dunk the fish into a slightly beaten egg, add some flour then formed it in a patty then rolled it in panko.
Yes, I think that’s what I did. Oh I forgot I added minced ginger, pepper and curry powder. Then fried it to a crisp.
It wasn’t poorly made but I wasn’t being considerate at all.
I was hungry and all I could think about was to make a short cut and be done with it.
Guilty feelings attacked me from every corner it was painful and prickly.
So I turned it into a bento. I tucked in a sliced lazy egg, an eggplant net with slightly pickled cucumber and finished it with rice and corn.
I am not sure if I was forgiven but for no wlet’s not think about that.
