Pork Binagoongan
½ kilo pork leg, cut into 2 inch chunks
2-3 tbsp shrimp paste
2 cloves garlic chopped
1 red onion chopped
2 tomatoes chopped
2 tsp sugar
Procedure:
Place pork in a pot with a little water. Simmer until dry. When pork oil appears sauté garlic, onions and tomatoes.
Add the shrimp paste. Toss lightly. Add sugar according to your preferred taste. Simmer until pork is tender.
Serve with steamed white rice.
The only reason I cooked this is to prove myself right. My mother thought ill of the idea of cooking pork with shrimp paste. She did agree afterwards with a satisfied empty plate. I don’t know what her deal is I’ve always cooked food she wasn’t familiar with and they always turn out delicious but she still doubts me.
