Last Sunday, market day, I managed to get my hands on some fresh water clams. I normally eat them simply steamed in salted water but this time since I’m cooking I made soup. At first I played with the idea of making a cioppino or a chowder perhaps.
Enough thinking I said. Afterall what I really wanted is to do something simple.
1 1/2 cups, cleaned well
1/4 cup white tuna
2 cups, shrimp stock
1/4 cup sweetcorn kernels
8 cloves red garlic, minced
1 red bell pepper, chopped
1 medium carrot, chopped
salt and pepper to taste
chopped spring onions, to garnish
toasted bread, to garnish
1. Steam the well cleaned clams. Discard any unopened shells.
2. In a pot, melt a tablespoon of butter over low heat.
3. Saute the chopped garlic for a minute or two leveling the heat to medium. Add the chopped bell pepper and carrot. Stirring well for 5 minutes.
4. Pour in the shrimp stock and let simmer.
5. Once the shrimp stock starts to simmer add the clams and corn. Season with salt and pepper. Turn off heat after about 5 minutes.
6. Laddle into serving bowls. Garnish with chopped spring onions. Serve warm.
I had fun shooting this particular dish. Or should I say I felt really happy. The feeling was similar as to when the first time I spent a day with Nikko. I can’t give the details because I want to keep that for myself. When I remember that day I can’t help but feel comfort.
Which lead me to think of Janice the very first true friend I’ve ever had. I lost her a few years back. It seems that when I let go of her the first time it made the bond between us crack and eventually break.
Maybe that’s why when I met Nikko and Jane later on I tried really hard not to lose a friendship like that again.
Speaking of which I don’t thing Nikko would like this. Nikko is a pork/chicken person. I never saw him order seafood during all those dinner/lunch dates. Arg!
Jane might but she’s far away.
Although they both once (or twice) said that they’d eat anything I cook. So it makes me really really really happy. So happy that I’m floating.
I don’t m iss them though. Hahaha, I’m so strange.
