Boiled Pork with Noodles and Vegetables
pork belly
1 cup chopped cabbage
1 cup 2″ long string beans
2 pcs green chili
1 pc medium *patola,quartered
1 cup cooked pasta (short ones preferred)
2 pcs big plump ripe tomatoes,halved
1 pc white onion, quartered
salt to taste
pepper to taste
1. Divide pork belly. Cut pieces into 1 x 1 1/2 inch size enough for 2 servings.
2. Place pork, tomatoes and onion in a pot. Fill it with fresh water to cover. Boil until pork is fork tender. Scoop out the residue from the boiled tomatoes and onion in order for the soup to be as clear as possible. Lower fire into simmer.
3. Add vegetables starting with the string beans. Once the strings beans achieve a brighter green in color add the cabbage. Once cabbage is cooked but still crunchy add the chili and *patola. Season with salt and pepper. Turn off fire after 2 minutes.
4. To serve, assemble pasta,pork and vegetables in a bowl. Add soup as much as you desire. Enjoy.
*loofah sponge gourd (ridged variety)- has a very light scent similar to a screw pine leaf
