I’ve been buying FOOD magazine ever since 2005 and always marveled at their collection of household recipes from celebrities and ordinary food lovers. Here’s a favorite in the cookie department.
Oatmeal Lace Cookies

1/4 cup unsalted butter
1 /2 cups oatmeal
3/4 cup sugar
1 tsp baking powder
1 tsp flour
1 tsp salt
1 egg, beaten
2 teaspoons vanilla
Preheat oven to 375 F. melt butter pour over the oatmeal. Stir.
In a seperate bowl, combine sugar, baking powder, flour and salt. Add to oatmeal mixture.
Beat together egg and vanilla and blend with oatmeal mixture.
Line cookie sheets with parchment parchment paper or aluminum foil. Drop cookie dough by teaspoonsful on cookie sheets, about two inches apartto leave room for cookies to spread. Press each dropped dough with the back of the spoon to flatten slightly.
Bake for ten minutes. Let cookies cool then peel off from parchment paper or aluminum foil. Cookies should spread paper thin and be very crisp when cooled. keep in tighly closed container since cookies soften easily.
