Flour is a staple in our kitchen. There are a number of things I can make out of it. A cake. A doughnut. A pancake. A dinner roll. A cruller and then some. Of course not everything I make turns out edible.
The very first pizza I made was so hard and undercooked that I had to pretend its the oven’s fault. I eventually dumped them scraping the topping into my mouth first.
So when I found a recipe of crepe that didn’t involve plain flour I immediately grabbed the chance to make it on my birthday. Mille means a thousand and since I wasn’t able to make a thousand…you get the idea.
I swear it turned out amazingly good for a beginner.
Maya Mille Crepe
(makes about 48-50 crepes)
8 eggs
8 tablespoons vegetable oil
4 cups milk
4 cups Maya Original Hotcake Mix
Beat eggs slightly, then add butter, milk and hotcake mix. Stir until mixture is free from lumps.Heat an 8-inch non-stick pan or flat skillet and lightly brush with oil. Using a small ladle (approx. 1/4 cup), pour the mixture into the pan. Tilt from side to side until it covers the pan. Cook until set, flip to cook other side. Do the same for the remaining mixture. I brushed the pan with oil ever so lightly before cooking a piece.
I then spread a thin in layer of basic egg custard in between the crepes then drizzled it with strawberry sauce before serving.
