Chocolate oatmeal cookies
1 1/3 cups all purpose flour
2/3 cup old-fashioned oatmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon powder
1/2 teaspoon fine salt
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
2/3 cup Hershey’s chocolate powder
1. In a bowl, combine flour, oatmeal, baking powder, baking soda, cinnamon powder and salt. Set aside.
2. Beat butter with white and brown sugar until well combined. Add egg and vanilla extract.
3. Stir in flour mixture.
4. Shape cookies and place on greased baking sheet, leaving enough space in between each cookie.
5. Bake at 350 F for 15 to 18 minutes. I turned off the oven after 16 minutes then left the cookies to continue cooking for 1 minute more before taking them out. Cool completely.
Sometimes I do not understand why I do these things. This oatmeal cookie is supposedly a chewy oatmeal raisin cookie by Chef Jun Jun de Guzman. Che’f Jun Jun’s recipe calls for a whole wheat flour that would lower down the carbohydrates content. I’m sure that his recipe is a lot better than my instantaneously deconstructed cookie recipe, the litte girl who lives next door however loved it.

Chewy and Healthy Oatmeal Cookie
1 1/3 cups whole wheat flour
2/3 cup old fashioned oatmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon powder
1/2 teaspoon salt
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
2/3 cup raisins
1 In a bowl, combine flour, oatmeal, baking powder, baking soda and salt.
Set aside.
2 Beat butter with white and brown sugar until well combined. Add egg and vanilla extract.
3 Stir in flour mixture. When combined fold in raisins.
4 Shape cookies and place on greased baking sheet, leaving enough space between each cookie.
5 Bake at 350 F for 15 to 18 minutes.
6 Remove cookies from baking sheet and cool on a wire rack completely.
