This one I didn’t make. Our new househelp, Polang, made these last Saturday while I was out. I met with my dentist that day and ended up having a tooth extracted so it was pretty painful and my mother thought I’d be in a bad mood because I won’t be able to eat well. Good thing I have a tolerance for pain and I don’t bleed that much so after only four hours I was back to my regular eating habit.
Polang was just finished cooking when we arrived so it was still pretty hot. At first I thought it was made with glutinous rice cince I was told it was a localized hotcake. After I cleaned up and changed my clothes I asked Polang how she made it. Here’s her recipe.
3 cups boiled and mashed balinghoy
2 cups, grated young coconut meat (save 1/4 cup for garnish)
1 cup sugar, more or less
oil for frying
All you have to do is mix all the ingredients. Form them in a big round patty before frying.
The texture was soft yet gummy when chewed. It was perfect for nibbling while chatting with my underage friends later that afternoon. It never occured to me that I just went to the dentist earlier that day. As of now I’m sure you know that I’m the type who won’t let that kind of thing stop me from enjoying good food.
