A quick one bowl nibbles in between heavy hitters.

Matcha bars
You will need:
8 tbsp unsalted butter
1 cup minus 2 tbsp brown sugar
1 large egg
1 tsp vanilla
pinch of salt
1 cup all purpose flour, sifted
1/2 tbsp matcha/green tea powder
Pre heat oven to 350 F. Grease and then flour a 7 X 6 (or if you 8 X 8) baking pan.
Melt the butter, while still warm add the sugar and stir until melted. Once cooled down, add the egg. Mix thoroughly. add vanilla and salt. Mix thoroughly. Add the flour in three additions. Once well incorporated sift the matcha in.Mix well. Scoop batter into pan. Bake for 20-25 minutes or until set in the middle. Cook in a wire rack. You should be able to hold it in one hand without the whole matcha block breaking. cut into bars.
