Half kilo pork cutlets
Half cup dark soy sauce
3 tbsp oyster sauce
1 cup water
1 tsp instant coffee
1/3 cup brown sugar
2 medium sized onions, sliced into rings
Oil for searing pork
1/3 cup calamansi juice + 6 tbsp soy sauce (for marinade)
PROCEDURE:
Marinate pork in calamansi juice and soy sauce for 20-30 minutes. Chill covered. Discard marinate.
Heat oil in a frying pan. Sear pork in batches. Add oil as needed. After searing all pork pieces, caramelize onions into remaining oil.
Put the seared pork cutlets into the pan together with the onions. Keep high heat through the entire cooking process. Add ½ c dark soy sauce, 3 tbsp oyster sauce and brown sugar. Add water and cook the pork until liquid turns thick. Serve.
My 9 year old cousin caught me cooking. He always seemed to enjoy helping in the kitchen and enjoy eating too. So after I turned off the fire he asked for a serving. He told me a number of times he loved it. I planned on making a pork bistek but as always I got inventive and added coffee. So I had to adjust the taste to make it sweeter. I promise it turned out delicious.
