1 head Chinese cabbage
Water to cover the cabbage
4 tbsp salt, divided
1 big apple, sliced thinly
1 big red onion, sliced thinly
1 small carrot, sliced thinly
1 tbsp crushed peppercorns
1 tbsp of julienned ginger
5-6 tbsp red pepper paste
PROCEDURE:
Slice cabbage into half inch strips then soak in a brine solution of water and 2 tbsp salt. Make sure to keep the cabbage submerged for the entire 6 hours in the refrigerator. Drain cabbage.
In a tub, combine the rest of the ingredients. You may adjust the seasoning because this one is very spicy. Cover tightly and refrigerate overnight or two. Best paired with grilled or fried meat, poultry or fish.
Oh yes, this isn’t the real thing but I just had to adjust it. I was really craving for kimchi. So there you have it. It may not be the real thing but it satisfied my taste buds just the same.
