The morning of January 1st(around 8am), I was able to gather a handful of side dish leftovers that has nowhere to go. I feel there “what about me?” cries as the ham, roast turkey and such gets to be reheated with no trouble. So here’s what I made a vegetable and chicken omelet with yellow fried rice.

left over side dishes(mushrooms,snow peas,capsicum,etc)
plus a handful of fresh alugbati
1 small onion, chopped
2 eggs,beaten lightly
2 cloves garlic for fried rice
1 cup leftover stock for fried rice ( I had some in the fridge)
oil, for sauteing and frying egg
oil, for fried rice
Heat oil,add in chopped garlic. Add rice and stock,stir fry until the grains separate and stock is absorbed. Season with salt and pepper.
In a non-stick pan over medium heat , stir fry the vegetables in a little oil for about 3 minutes. Set aside. Cook egg, when almost done place the veggies in the other half of the omelet then flip other side to cover. You may cook according to your desired doneness.
